A surreal day of wet rock climbing the cascade of waterfalls and swimming holes on my favourite mountain. One of those special places that feels like home and leaves you fully recharged.

So grateful for friends who lead you to hidden gems and for days that feel like little treasures. 🙏 This is where I’ll be for the rest of summer!

Here’s a recipe share from the night:

YOGURT STRAWBERRY LOVE BITES

✅1 1/2 cups fresh Strawberries (chopped)
✅1 cup Plain Greek Yogurt ✅1 tbsp Raw Honey
✅1/2 tsp Vanilla Paste
✅1 1/2 cups Dark Chocolate Chips
✅1 tbsp Coconut Oil
✅Dried rose petals or Sea Salt (flaky) to top them off

1. Line a baking sheet with parchment paper.

2. In a bowl combine the strawberries, greek yogurt, honey and vanilla paste, mix well.

3. Spoon the yogurt mixture onto clusters (about 2 tablespoons) on the prepared baking sheet.

4. Transfer the baking sheet to the freezer for about 2 hours, until completely frozen.

5. Combine the chocolate chips and coconut oil in a bowl and microwave on high in 30 second intervals until melted. Stir with a spoon to fully combine.

6. Remove clusters from the freezer and dip into the chocolate until fully coated, use a fork to remove and be quick!

7. Transfer back to the same baking sheet and garnish with dried rose petals or sea salt. Repeat until all clusters are coated, then place in the fridge until the chocolate has hardened.

Serve from the fridge and enjoy! Soooo yummy 😋

I’ve always danced to the rhythm of my own heartbeat, but there are times when the noise of the world drowns out my inner melody, and I’ve questioned whether following my dreams was worth the risk.

Last year brought me to my knees when I felt the sting of rejection and judgment, both personally and professionally. 💔

I stumbled, I fell, I questioned whether I had what it takes to get up again. And yet, with each setback, I’ve discovered a resilience within myself that defies logic, and that life is a journey best travelled with friends by our side. 🤝 💖

👁️ It’s in the mirror of their eyes that we see our truest selves reflected back, our flaws transformed into badges of honour, our scars into stories of strength.

I’m learning that failure is not the end—it’s a stepping stone to growth and resilience. 🌱💪🏼 We all stumble, we all face setbacks, but it’s how we rise from them that defines us.

Coming together with these likeminded women reminds me to take the risks, dare to dream big, and remember that “every setback is just a setup for a comeback”. 💫🌟

As the year draws to a close, I reflect on the once-bold strokes outlining my future that had gracefully transformed into a tentative sketch. Each eraser mark and faint line narrating the story of envisioned dreams and paths not taken 🎨

For those who know me, it's clear I've been on a journey to follow my purpose in life. This quest has been a turbulent ride, as though my soul, weathered by past storms, hesitated to sail towards a set destination, uncertain if the shores of fulfillment were real or a mere mirage.

But this turned out to be the year that brought me home and back into the world of my most cherished values; to the warm embrace and laughter of loved ones, to the love of learning, to relishing the uncomplicated beauty of nature and to the scared simplicity of daily life.

So it is with deep gratitude that I share a significant shift in my journey. 🙏 After much reflection, I've stepped away from my nutrition consulting business. Instead, I’ve returned to my love of being a personal chef, and creating more time for family, friends, learning and self-discovery. 🧘‍♀️🍲

This decision isn’t a departure but a redirection—a conscious step towards aligning my actions with the beat of my own heart. 💓

Berry Bliss Chia Mousse (6 serves)

Cold Dreary Winter Day = Soup

This hearty lentil curry soup will warm you from the inside, and it’s done in 30 minutes.

Ingredients

1 tsp Coconut Oil 1 Onion (finely diced)
2 Garlic clove (minced) 1 tbsp Curry Powder
1 tsp Turmeric 1 tsp Garam Masala
1/2 tsp Ginger  Sea Salt (optional)  2 cups Diced Tomatoes
4 cups Vegetable Broth 1 cup Dry Red Lentils 1 cup Canned Coconut Milk (full fat) 2 cups Cauliflower (cut into small florets)
2 cups Kale Leaves (finely sliced)
1/2 cup coriander (finely diced)

Directions

1️⃣ Heat coconut oil in a large stock pot over medium heat. Add the onions and saute for about 4 minutes or until translucent. Add in the minced garlic. Saute for another minute.

2️⃣ Add in the turmeric, garam masala, curry powder and ginger. Stir for a minute or until spices are well mixed.

3️⃣ Add diced tomatoes, stir through and add the vegetable broth. Bring to a boil then reduce heat to a simmer.

4️⃣ Add in the dry lentils and cauliflower florets, cover and cook for 10 to 15 minutes.

5️⃣ Once the lentils are cooked through, add in the coconut milk. Stir well to mix, then add in the kale. Stir again until the kale is wilted. Turn off the heat. Ladle into bowls and enjoy.

🙌 We've all been there.

🕑 The afternoon ticks around and it’s a serious battle against the yawns.

We daydream of places to nap, and focus is a distant memory.

The dreaded afternoon slump.

I always want chips.

I love chips.

I don’t love the junk that makes up the average chip. I need a power chip. 😆

My go-to chips are made from humble chickpeas and a little kitchen magic. Loaded with protein, fibre, healthy fats, plus B vitamins for extra oomph, they’re the ultimate addition to power up the day. ⚡️

Bonus, they satisfy the snack monster and instantly transport you to a world of savoury deliciousness.

🧑‍🍳 Here's a sneak peek into the recipe:

Ingredients:
✅ 1 cup Chickpea Flour ✅ 2 tbsps Nutritional Yeast ✅ 2 tbsps Hemp Seeds ✅ 1 1/2 tsps Baking Powder ✅ 1 tsp Turmeric (powder) ✅ 1/4 tsp Cumin ✅ 1/4 tsp Garlic Powder ✅ 3 pinches Sea Salt ✅ 2 tbsps Extra Virgin Olive Oil ✅ 1/4 cup Water

Instructions:
1️⃣ Pre-hear oven to 180 degrees C.
2️⃣ Combine the dry ingredients in a bowl.
3️⃣ Add olive oil and water. Mix well.
4️⃣ Divide the mixture into two, and knead out two squares.
5️⃣ Place one square onto a non stick mat. Place a strip of baking paper on top, using a rolling pin, flatten out the mixture (thin).
6️⃣ Remove baking paper and with a fork, gently press half holes over the flattened mixture. Sprinkle with a pinch of sea salt.
7️⃣ Slice into rectangles, then half diagonally and place on a lined baking tray.
8️⃣ Bake for approximately 10 minutes or until golden brown.
9️⃣ Repeat with the other half of the mixture.

🌟 Chickpea Chippies to power up the day 🌟

🙌 We've all been there.

🕑 The afternoon ticks around and it’s a serious battle against the yawns.

We daydream of places to nap, and focus is a distant memory.

The dreaded afternoon slump.

I always want chips.

I love chips.

I don’t love the junk that makes up the average chip. I need a power chip. 😆

My go-to chips are made from humble chickpeas and a little kitchen magic. Loaded with protein, fibre, healthy fats, plus B vitamins for extra oomph, they’re the ultimate addition to power up the day. ⚡️

Bonus, they satisfy the snack monster and instantly transport you to a world of savoury deliciousness.

🧑‍🍳 Here's a sneak peek into the recipe:

Ingredients:
✅ 1 cup Chickpea Flour ✅ 2 tbsps Nutritional Yeast ✅ 2 tbsps Hemp Seeds ✅ 1 1/2 tsps Baking Powder ✅ 1 tsp Turmeric (powder) ✅ 1/4 tsp Cumin ✅ 1/4 tsp Garlic Powder ✅ 3 pinches Sea Salt ✅ 2 tbsps Extra Virgin Olive Oil ✅ 1/4 cup Water

Instructions:
1️⃣ Pre-hear oven to 180 degrees C.
2️⃣ Combine the dry ingredients in a bowl.
3️⃣ Add olive oil and water. Mix well.
4️⃣ Divide the mixture into two, and knead out two squares.
5️⃣ Place one square onto a non stick mat. Place a strip of baking paper on top, using a rolling pin, flatten out the mixture (thin).
6️⃣ Remove baking paper and with a fork, gently press half holes over the flattened mixture. Sprinkle with a pinch of sea salt.
7️⃣ Slice into rectangles, then half diagonally and place on a lined baking tray.
8️⃣ Bake for approximately 10 minutes or until golden brown.
9️⃣ Repeat with the other half of the mixture.

With its combination of fiber-rich beans, vitamins and minerals from fresh vegetables, and healthy fats from ingredients like avocado or olive oil, this snack is not only delicious but a nutritional powerhouse. 😋

Today I'm sharing a glimpse of a simple and balanced meal.🥗

But don't let its simplicity fool you - it packs a punch in the nutrition department. It’s a great meal prep lunch and so easy, you can make it with your eyes closed (but please don't, we don't want any salad disasters).

Whole food rarely falls completely into one macro category, it comes as a package and there’s often crossover, but for general purposes let’s break this meal down and see how it’s balanced:

✅ Carbohydrates - I always start my meals with plants and seperate them into non-starchy and starchy. Most of the plate will be filled with non-starchy carbs. In this case the non-starchy carbs are baby spinach, rocket, tomato, cucumber, capsicum and red onion. This is where important micronutrients, especially folate, and phytonutrients are coming from. These molecules make things happen in the body by acting as cofactors for vital functions plus good gut bugs LOVE phytonutrients. Then I add a small amount of a starchy carb for slow burn energy, in this case quinoa. It’s a bit of a protein crossover, but still a starchy carb.

✅ Protein - we want to be getting (in general) between 25-30g protein per meal to stimulate 24h muscle synthesis, which is essential for building and repairing tissues and also stabilising blood glucose variability. I chose 100g of chicken breast to achieve this. If changing the chicken for chickpeas, you’ll need about a cup plus about 30g of seeds like pumpkin or sunflower.

✅ Fats - can’t go past avocado and olive oil for beneficial monounsaturated fats. These added to the salad help us feel full longer and the avo adds some creaminess to the meal. Plus they help absorb fat soluble vitamins and are heart healthy.

“I think it’s really a swan, like the ugly duckling”, says my little nephew.

We’re at City Chicks in Stamford picking up ducklings for a 2 night sleepover and amongst the fluffy yellow ducklings is this skinny brown (my nephew insists grey) little puff ball.

“Can we get that one?”

We did get that one. It temporarily became known as Jimmy, plus a yellow ducky the girls named Nipper.

Our duckling sleepover was several days of cuteness overload, especially when they went for their first swim (in a tray with a couple of inches of lukewarm water). Watching their instinctive behaviour as they ducked and dove, splashed and played around, then stood up tall to shake the water off. Adorable.

They snuggled in our hands, jumped around like their legs had springs and splashed their drinking water everywhere. Everywhere.

The whole time, my nephew looked for signs Jimmy was really a swan. “It’s neck is longer than Nippers”, “It dives like a swan”, “See how it sits in the water”.

In my nephews eyes, Jimmy was already the most beautiful swan and not just a skinny brown duckling. 🦢 #nownourished
